Cured Ocean Trout with a Fennel and Witlof Salad (Lakerda)

Lakerda is a mezze of cured Bonnitto (similar to a small tuna) that Greeks eat throughout the year. It is best enjoyed with red radish and ouzo.  I started doing Larkerda with Ocean Trout at the Rose and have continued doing it ever since. The fennel and witlof salad is a great accompaniment. It is an ideal entree for a dinner party. This recipe makes 8 individual serves.
