Vermicelli Noodles tossed with Lamb Fillet & Omelette

Ingredients:

  • Lamb Fillet Sliced & Marinated in Soy & Cornflour  2:1
    Eg. 500g Lamb – ½ Cup Soy : ¼ Cup Cornflour

Example per portion

  • 100g meat
  • 150g bean thread Vermicelli
  • 1 spoonful Egg Omelette
  • 1 spoonful Spring Onions
  • 1 spoonful Julienne Snowpeas
  • 2 tbsp shaoxing Wine
  • 1 tbsp chilli Jam
  • 2 tbsp soy sauce
  • 50ml peanut oil for cooking

Method:

  1. In hot Wok, add oil & allow to heat till smoking
  2. Add Lamb & Sauté
  3. Add Noodles, Stock, Vegetables & Seasoning
  4. Sauté until cooked 
  5. Taste & adjust seasoning

 

Garnish with chopped spring onions
